Tomato-Cheddar Grilled Cheese

Makes 2 Servings

  • 2teaspoons olive oil, divided
  • 1cup cherry tomatoes, halved
  • Pepper
  • 4slices whole wheat bread
  • 3ounces shredded cheddar
  • 2tablespoons basil, roughly chopped
  1. In a large skillet over medium heat, heat 1 teaspoon olive oil. Add tomatoes, season with salt and pepper, and cook, stirring, until tomatoes are very soft and some of their moisture has evaporated, about 5 minutes.

  2. Assemble each sandwich with 2 ounces shredded cheddar, half the cooked cherry tomatoes, and 1 tablespoon basil.

  3. Wipe skillet and return to medium-low heat. Heat remaining 1 teaspoon olive oil. Add sandwiches and cook until underside is toasted and cheese starts to melt, about 3 minutes. Flip and cook until browned and cheese is melted, about 3 minutes more.

  4. Cool slightly before serving.
