Herbed Goat Cheese and Snap Pea Sandwich

Makes 2 Servings

  • 4ounces soft goat cheese, at room temperature
  • 1tablespoon chopped parsley
  • 1tablespoon chopped basil
  • Pinch of paprika
  • 4slices whole wheat bread, toasted
  • 1cup snap peas, ends trimmed, very thinly sliced
  • 2teaspoons olive oil
  • Black pepper
  1. In a small bowl, stir together goat cheese, parsley and basil with a fork.

  2. Spread goat cheese evenly over each slice of bread, then sprinkle with paprika. Top two slices with snap peas, then drizzle with olive oil and garnish with black pepper. Sandwich with remaining slices of bread.
